Capturing The Labor








I have added something new to my business, Capturing The Labor. Capturing the Labor will include a pregnancy session, the labor and delivery, a session within the first 3 days of the birth of your child and a disk of photos from all 3 sessions. SNP Has a New Look!





Many Many Thanks to Christine Puccinelli for your beautiful work! I LOVE my new logo! I decided it was time for a change and Chris helped create a fun new look for SNP!! I am excited for a wonderful 2010 and I look forward to all the many photos that will have my new logo on them! Here are a couple pictures to see the new look! I have the wonderful option of both black and white and color! I love them both! The logo is very special to me! The 3 circles stand for my 3 beautiful children. As you can see in the color - two boy colors and one girl color! I would love to hear your thoughts, and Chris - THANK YOU!!!

Spaghetti Pepperoni Pie






This one was super easy to make! I made two of them, one with pepperoni and one without! I also made them in glass pyrex instead of the skillet! I am looking forward to a delicious dinner tonight!!

Prep: 10 minutes
Bake: 40 minutes
Cook: 8 minutes

Ingredients

1/2 pound spaghetti, broken up into thirds
1/3 cup dry seasoned bread crumbs
2 cups bottled chunky pasta sauce
1 cup shredded mozzarella cheese
4 ounces sliced pepperoni, chopped
4 large eggs, lightly beaten
3 tablespoons grated Parmesan

Directions

1. In large saucepan of lightly salted boiling water, cook spaghetti 1 minute less than directed on package. Drain
2. Heat oven to 350 degrees F. Coat 10-inch nonstick skillet with nonstick cooking spray. If skillet handle is not ovenproof, wrap with aluminum foil. Coat with crumbs.
3. In bowl, combine spaghetti, pasta sauce, mozzarella and pepperoni. Stir in beaten eggs. Spoon mixture into prepared skillet.
4. Bake in 350 oven for 30 minutes. Sprinkle with Parmesan. Bake until cheese is golden brown, 10 minutes. Let cool 10 minutes. Cut into 6 wedges. Serves 6

Chicken Enchilada Casserole











I thought it would be fun to photograph the making of a couple dishes! As a mom of 3 all 4 and under I don't have a lot of free time on my hands! I wanted to start preparing things that I could make in the morning, stick in the fridge and than at dinner time stick it in the oven! I have found about 5 recipes that I am going to make and I will post them on here for you to enjoy as well!!This is the first time making this one! I am looking forward to cooking it tonight and enjoying a (hopefully) delicious dinner!!

Makes: 10 Servings
Prep: 10 minutes
Bake: 28 minutes
Cook: 10 minutes

Ingredients:
3 cups shredded, cooked chicken
1 packet (1.25 ounce) taco seasoning
2 cups salsa verde
9 fajita-size flour tortilla
1 can (15.5 ounces) refried beans, warmed in microwave
8 ounces sour cream (I did not use)
3 cups shredded cheddar cheese

Directions
1. Heat oven to 350. Mix chicken, taco seasoning, 1/2 cup water and salsa verde in a skillet. Simmer on medium heat for 10 minutes.
2. Coat 13x9x2-inch pan with nonstick cooking spray. Cover bottom of pan with 3 flour tortillas, overlapping. Pour half of the chicken mixture on the tortillas. Cover with 3 more tortillas. Spread with warmed beans and the sour cream.
3. Sprinkle half the cheese over the beans and sour cream, and cover with the remaining 3 tortillas. Top with remaining chicken mixture, followed by remaining cheese. Bake at 350 for 25-28 minutes, until bubbly.

Girls Afternoon Fun






I got a bunch of my girlfriends together and we had a wonderful lunch and some had some wine and we had a fun afternoon of hanging out and they were great and let me practice my photography skills on them!! We had such a wonderful time! We are looking forward to getting together again in March!!

Little Miss 'M'









I have had the pleasure of watching Miss 'M' grow up!! I have taken her 3-6-9 month photos! More like 4 - 7 - 10, but same idea! We had so much fun today! I was capturing how she is able to stand and even walk! Such a big girl!!
